500gr red lentils

1 medium onion, thinly sliced

1 clove garlic

1 carrot thinly sliced

4-5 tbsp tomato sauce

1 tsp turmeric

1 tsp coriander powder or 2 tbsp fresh, chopped

1 tsp ginger powder

2 tbsp chopped parsley

3-4 bay leaves

sea salt, pepper
Red lentils…? Yes, that is right, or egyptian lentils, as they call them because they come from far east and you will find them easier in eastern markets or organic stores. They are better than the usual brown lentils for two reasons: they are far more nutritious and they are ready in only 10 mins! So, when you have little time to cook, you only need 15 mins to prepare this delicious spicy dish!

Put the onion in the pot and simmer with a little bit of water for 3-4 minutes. |

Add the tomato sauce and carrot and keep stirring. |

Add the lintils and water, spicies, salt and pepper. |

Let them boil for 10' or so, they will soften relatively quickly. |

Remove from the heat and add the parsley. |

Serve with olive oil and freshly ground pepper! |
Extra Tips
- Αν θέλετε λάδι, προσθέστε το στο πιάτο όταν σερβίρετε το φαγητό, ώστε να είναι ωμό και άρα πιο ωφέλιμο, έτσι θα γίνει και το φαγητό πολύ ελαφρύ.
- Αν χρησιμοποιήσετε τις κλασικές φακές, θα χρειαστεί περισσότερο βράσιμο.
